The taste of piri piri is nothing less than fiery and full flavored. This is largely due to African bird’s eye chilies, the star of the sauce. Piri piri which directly translates to pepper pepper was created by Portuguese colonists settling in Africa. The colonists discovered the peppers, made the sauce and decided to import the special peppers to Portugal which led them to gain quite a presence in Portuguese cuisine.The incendiary chili delivers an intense level of heat. They can be purchased dried online or you can find them at specialty grocery stores. Due to the heat level, you will have to experiment with the amount used. Those who are not up to the search can use any hot red pepper.

  • 10-12 fresh red chilies
  • 3-4 cloves of garlic
  • ½ cup extra virgin olive oil
  • Juice of 1 lime or half a lemon
  • Salt, to taste

1. While wearing gloves, rinse the peppers, remove the stems and roughly chop. Keep the seeds and ribs for more heat.
2. Add the chilies to a blender or food processor with the garlic, oil, and lime/lemon juice.
3. Process until a paste forms. Feel free to add more oil to achieve a thinner sauce.
4. Transfer the piripiri sauce to a jar, screw on the lid and refrigerate. The longer it sits in the fridge, the better it gets.
5. Use as desired. Sauce stays fresh for 1 month.
